Case Study: The Vic Café
The Vic approached us with a very unique but desirable problem—they were too busy for and had outgrown their existing space. They were looking to move from their 18 seat restaurant with a 30 seat patio they set up in front of the Library next door, to a much larger space a few doors down. This new space would give them over 40 seats inside and the potential for 80 on their street-side patio. The other big change? The original Vic Cafe was a coffee shop with no kitchen and they wanted something more. They wanted to move their small salads, power bowls and smoothies menu to a full service kitchen and add a number of modern diner items offering a full breakfast menu. It was a big jump for a couple who started their cafe with little to no experience in the food service industry, but they knew they had something special to offer just weren't sure how to put their plan into motion. The Fifteen Group worked along with Rick and Sonya to develop a full menu for their modern diner and had a great vision for what they wanted. We created a menu taking their popular existing items and added a menu that focused on breakfast and diner classics with a twist of offering some healthy plant based options as well as indulgent classic items. Along with this menu we created the training materials and daily operating systems to be implemented including labour and inventory management software for the successful management of this new larger venture. Finally, we helped them update their brand materials to help launch the new venture in a way that felt true to the old brand, while instilling new energy to fill the much larger space. The Vic Opened in March of 2019 to a ravenous guest base who had been eager for their return.
